Help with Polaris 340 fan carbs. Stalling at idle...

I have a 1994 Polaris Indy Lite that I am restoring. I am having a difficult time getting it to idle. It starts normally using the choke. When I turn the choke off it idles fine for 30 seconds to a minute and then idles down and abruptly stalls. When it starts idling down, I can keep it alive by applying/feathering the throttle. If i dont mess with the throttle it dies.

I have removed and cleaned the carbs twice. They are spotless. The main jets are 140's (stock 145), pilots are 35's which are stock and the LS screw is out 1 turn. Compression is around 100 psi per hole (its fan cooled so this should be fine). The crank seal on the PTO side which is visible is clean. I have tried spraying starting fluid around crank seals and intake boots to notice a change in engine speed and nothing changed. I also removed the fuel lines from the fuel pump while it was running and the fuel pump is pumping fuel to both carbs.

Can anyone tell me why it idles ok for a little bit then abrubtly stalls? What else should I check? Im stumped. Thanks in advance.
