96 500 Carb Dies after a few minutes

Hey all,
I work for a dealer here in MA. I've got a customer's 96 500 carb here and I'm trying to get it going for him. I've been through the carbs, synced the slides and choke plungers, new plugs, new fuel and new fuel filter. Air screws set to 1 turn out, jets are stock and clean. Compression is 130 in both. Intake boots are new.

Here's the problem. It starts and runs but idles high (~2200, supposed to be ~1600 according to the manual). Tweaking the idle speed screws drops it to about 1000 where it's clearly not happy. It's acting like it's lean even though it's not. The carbs are clean and intake boots are new. I can spray carb cleaner all over the carbs and intake boots and nothing changes so there are no air leaks.

After about 5 minutes or so it's like you turned the key off. It starts to bog and throttling does nothing and it will not restart. If you wait an hour or so it'll start first pull and run for a few minutes before dying again.

He only paid $300 for the sled and I'm a little over that in parts and labor so I don't want to cost him a fortune obviously so I'm wondering if there's any common problems these sleds have had? I'm leaning electrical but at $100/hr shop rate it's not really worth it to spend a ton more time on it.
